We all agree that breakfast is the most important meal of the day, however sometimes life gets in the way. With this, being the issue for many of our members we went ahead and created three simple and fast healthy breakfast recipes that anyone can make. So put on your Chefs hat and prepare your taste buds for a healthy flavor explosion to kickstart your day.
Baked mini omelets
Ingredients
- 8 slices unsmoked bacon (use vegetarian bacon if preferred*)
- 1 tsp. ghee or organic butter
- 3 button mushrooms,
- finely chopped 8 cherry tomatoes,
- 6 free-range eggs
- salt and pepper to season
- 3/4 tsp. paprika
MAKES 8 OMELETS
Instructions
Preheat oven to 200˚C/400˚F. Lightly grease 8 compartments of a muffin tin with oil or butter. Line each compartment, base, and sides, with a slice of bacon. Use scissors to cut the bacon slices to the right size. Melt the ghee or butter in a nonstick frying pan and sauté the mushrooms for 3-4 minutes over a gentle heat, stirring occasionally. Add the tomatoes and sauté for 2 minutes. Remove pan from heat. Divide the mushrooms amongst the 8 muffin tin compartments. Mix the eggs together in a bowl. Season with a small amount of salt (the bacon will add extra saltiness), pepper and paprika. Mix well. Divide the egg mixture amongst the 8 compartments. Add 2 tomato halves to each of the compartments. Bake for 15 minutes, or until the eggs are cooked.
Crunchy fruity protein yogurt
Ingredients
- 4/5 cup natural plain yogurt
- 1/5 cup vanilla or strawberry flavor whey or rice protein powder
- 1/2 cup strawberries or 1 cup mixed berries
- 1 tsp. roasted nuts/seeds
- 2 tsp. granola (optional),
- 1 tsp. honey
SERVES 1
Instructions
Place the yogurt in a bowl and stir in the protein powder, mixing thoroughly. Add the remaining ingredients. Consume immediately.
French banana toast
Ingredients
- 2.75 fl oz. unsweetened almond milk
- 1 medium sized free range egg
- 1 egg white
- 1/2 tsp. ground cinnamon
- 2 tsps. organic butter or ghee
- 4 slices banana bread, sliced thinly
SERVES 2
Instructions
In a bowl, whisk the almond milk, egg and egg white in a jug. Stir in the cinnamon. Place the bread slices in the mixture for one minute, then turn and leave for one minute. Melt the ghee / butter in a non stick frying pan. Move the pan around to cover the base evenly. Using a slice, remove the bread from the egg mixture and carefully place them in the pan. Gently fry for 2 minutes then turn and cook for a further 2-3 minutes, until a golden color. Sprinkle over a pinch of cinnamon and serve. Consume immediately.
